At European Foods we manufacture our analogue to exactly match the mature cheddar cheese we mix it with. This seamless mix of the two is essential so that the mild flavour of the analogue and the powerful flavour of extra mature cheddar give an over all mature cheese flavour at a cost far below that of mature cheddar on it's own.
